Omelette with Mashed Sweet Potato
Ingredients:
1 Egg
2-3 tbs fresh milk
Sweet potato (diced)
Mix Vege
1-2 tbs Unsalted Butter
Preparation:
1. Crack the egg into a bowl and beat them until they turn a pale yellow color.
2. Heat a heavy-bottomed nonstick sauté pan over medium-low heat. Add the butter and let it melt.
3. Add the milk to the egg and whisk like crazy. Beat as much air as possible into the egg.
4. Pour in the egg. Don't stir! Let the egg cook for up to a minute or until the bottom starts to set.
5. Gently push one edge of the egg into the center of the pan to allow the still liquid egg to flow in underneath.
6. Flip the egg pancake over, cook for another few seconds, or until there is no uncooked egg left. Omelette done.
7. Steam the sweet potato and mix vege until become tender.
8. Put hot potatoes into a bowl, add butter and mash until well mashed. Add mix vege & ready to serve.
